Docling (GitHub, Docs) is a project released by IBM that probably rips off Pandoc. It could be useful so I'm noting it. It parses multiple document formats like Pandoc, and it can be used in different AI scenarios. Given the IBM lineage, it's certainly going to be relevant in the RHEL world.
